    Learning Japanese culinary skills

Choose from the 'Japanese Home Dinner' workshop or the 'Japanese Lunch Set & Supermarket' tour.

The Japanese Home Dinner workshop includes the preparation of miso soup, tsukemono and the choice of one main dish and one side dish. These dishes are typical to the Japanese home kitchen, and will provide an insight into the difference between red and white miso, how dashi is made, the various kinds of tofu and explanations of other simple Japanese ingredients.

The Japanese Lunch Set & Supermarket tour commences in the kitchen where participants prepare, plate, arrange, and then partake in a traditional Japanese lunch set including miso soup, rice, Japanese pickles and one dish. The second half of the tour takes you to a local Japanese supermarket and is themed around fresh produce, shelf-stable pantry items and prepared foods. This tour will demystify many of the unfamiliar ingredients lining the Japanese supermarket shelves, and provide ideas on cooking with Japanese ingredients.

These cookery workshops take place on Monday, Thursday & Friday over lunch - from 11am to 2pm. They are held at a studio in Hirafu where participants prepare, plate and arrange, and then partake in a full meal together. The minibus will collect you from your accommodation in the centre of the Hirafu Village at 10.45am to transport you to the cooking studio and then return you back to your accommmodation later. You will also be given a recipe folder including over 25 recipes.

They keep it intimate - each course is limited to 6 people to ensure full participation....and it's very popular. You really must book with us before you travel, otherwise only disappointment and hunger will result.
